Just ran across this new recipe on Lime.com so thought I would share. Would love to see some others post recipes that we might all benefit from. Sorry it took so long for me to come up with something good! I've been trying really hard to go back to cooking healthy after a year of bad eating, so they're slowly coming back to me

Anyway, I really recommend eating Tabouli Salad. If you've eaten couscous, it's similar, but eaten cold.

Recipe:

1 Box of Tabouli Mix
1 Lemon (this is what gives the salad it's awesome taste)
1 Large Tomato
1 Large Cucumber
A bit of lettuce
Optional: Red chili powder,  cilantro, a bit of salt

Simply boil water and add mix, stirring all contents together. Afterward, let cool in refrigerator for about an hour.

In the meantime, dice up tomato and cucumber, and cilantro or substitute. The lettuce should be washed and left as a whole leaf on the plate where you will serve the salad.

Mix the tomato, cucumber, cilantro all together and squeeze the entire lemon over the salad. Stir to make sure that the lemon juice gets absorbed by the tabouli. Add salt or chili powder if you want extra taste.

Finally, serve over the lettuce and enjoy your healthy meal. I just had some for lunch!
