Apple Cinnamon 'Menopause Muffins' Recipe

Created by naturopathic physician and chef James Rouse, this recipe features ingredients including whole-grain flour, soy milk, flax and walnuts that help prevent and ease hot flashes, mood swings and other symptoms.

 

 

Ingredients

1/4 cup canola oil

1/4 cup maple syrup

1 cup applesauce

1 1/2 cups whole wheat pastry flour

2 tablespoons ground flax seed

1/2 teaspoon baking soda

1 teaspoon baking powder

3/4 teaspoon cinnamon

1 pinch sea salt

1/2 cup chopped walnuts


Directions

Preheat oven to 375 F.  Lightly coat a 12-cup muffin tin with cooking spray or paper liners.

Combine oil, maple syrup, and applesauce in a medium size bowl. Stir to mix. In a separate bowl, sift together the flour, ground flax, baking soda and powders, cinnamon, and salt. Stir in walnuts. Combine wet and dry ingredients and stir until just combined. Use a large spoon to drop the muffin batter into the muffin tins. Bake 18 to 20 minutes.

Makes 12 muffins.

Wondering if there could be a subsitution for the canola oil? Isn't canola oil high in omega 6 which we should limit in our diet? Genevieve Rohan
