Apple Cinnamon 'Menopause Muffins' Recipe
Created by naturopathic physician and chef James Rouse, this recipe features ingredients that help prevent and ease hot flashes, mood swings and other menopause symptoms.
Ingredients
- 1/4 cup canola oil
- 1/4 cup maple syrup
- 1 cup applesauce
- 1 1/2 cups whole wheat pastry flour
- 2 tablespoons ground flax seed
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 3/4 teaspoon cinnamon
- 1 pinch sea salt1/2 cup chopped walnuts
Directions
Preheat oven to 375 F. Lightly coat a 12-cup muffin tin with cooking spray or paper liners.
Combine oil, maple syrup, and applesauce in a medium size bowl. Stir to mix. In a separate bowl, sift together the flour, ground flax, baking soda and powders, cinnamon, and salt. Stir in walnuts. Combine wet and dry ingredients and stir until just combined. Use a large spoon to drop the muffin batter into the muffin tins. Bake 18 to 20 minutes.
Makes 12 muffins.

Wondering if there could be a subsitution for the canola oil? Isn't canola oil high in omega 6 which we should limit in our diet? Genevieve Rohan
